Roast Chicken

Roast Chicken

For Easter dinner at my Mom's last weekend, I made a Roast Chicken and it was so moist and flavorful. The Chicken I bought was expensive but organic, range free and antibiotic free, and it was worth the extra money I spent. I used a recipe from my guru Ina Garten (see links below), and made a few adjustments. I omitted Black Pepper since my Mom cannot eat it. If I were making this for Allen and me, I would add lots of Black Pepper, so I include it below. I did not use Fennel since I do not like it, but if you love it, just add 1 bulb of Fennel, remove the tops and cut into wedges. I like licorice candy but for some reason cannot enjoy Fennel. I added a bunch of fresh Rosemary to stuff inside the cavity with the other ingredients, because I love this herb with Chicken. I also think Rosemary and Thyme pair perfectly together when it comes to Chicken and Turkey and gives it more flavor. If you love Chicken as much as I do, give this recipe a go for your family dinner. It takes a short amount of prep time, is fail proof if you follow all the steps below, and simple to do.

Ingredients
1 (5 to 6) pound Chicken

Kosher Salt

Black Pepper

4 tablespoons Butter

1 large bunch fresh Thyme, plus extra sprigs for the pan

1 large bunch fresh Rosemary

1 large Lemon, cut into 4 quarters

10-12 cloves of Garlic, peeled

1 large yellow Onion, cut into wedges

5-6 Carrots, cut into 2-inch pieces

Olive Oil

Directions
Slice the Lemon into 4 quarters.

Take Garlic cloves and peel. Leave them whole.

Slice a large yellow Onion into wedges.

With a peeler, take off top layer of Carrots and cut into 2-inch pieces.

Melt Butter in microwave or pan. Put aside for now.

Preheat oven to 425 degrees.

Remove Giblets from Chicken and rinse it inside and out. Pat Chicken dry with paper towels.

In a roasting pan with rack place the Onions and Carrots. Take about 2 tablespoons of Olive Oil and coat Onions and Carrots, and season with Salt and Pepper. Add sprigs of Thyme around the pan.

Place Chicken in roasting pan.

Liberally Salt and Pepper the cavity of the Chicken.

Take bunches of Thyme and Rosemary, Lemon, and Garlic and stuff into the cavity.

Take melted Butter and brush the outside of the Chicken making sure you coat it entirely.

Add a liberal amount of Salt and Pepper.

Tuck the wing tips under the body of the Chicken.

Roast Chicken for 1 ½ hours uncovered in the middle rack of your oven.

The Chicken is cooked when it reads 165 degrees.

Remove Chicken and Veggies and place on a platter. Cover with aluminum foil for 20-25 minutes.

Serve and enjoy!

Thanksgiving Dinner

Thanksgiving Dinner

Rosemary, Thyme Lemon Turkey
We have two Thanksgiving dinners every year, one at my Mom's and our own the next day. This way, we can enjoy leftovers for days and not cook. This year, I made two Pumpkin Pies and an Apple Pie as well. My Mom's Thanksgiving dinner is Dominican style with Turkey, Pernil (Roast Pork), White Rice, Black Beans, Potato Salad, Salad, Avocado and Sweet Potatoes. Our Thanksgiving dinner was more American style but with a slight kick. We made Turkey, Turkey Gravy, Mushroom Cornbread Stuffing, Green Bean Casserole and Jalapeño-Sour Cream-Chives Mashed Potatoes. We hope you all had a wonderful Thanksgiving with your loved ones.

Rosemary, Thyme Lemon Turkey

Last year, I made Clinton Kelly's Lemon Sage Turkey and it was the first one I ever made and was a hit! This year, I decided to switch the herbs to Thyme and Rosemary and am glad I did. The Turkey came out so moist and rich with flavor from the herbs and lemon. It was superb.

Ingredients

12-16 pound Turkey (thawed)

1 bunch of fresh Thyme, plus 3 tablespoons minced

1 bunch of fresh Rosemary, plus 3 tablespoons minced

3 lemons

Zest of 1 Lemon

Juice of 1/2 Lemon

Olive Oil

Kosher Salt

Black Pepper

2 sticks unsalted Butter, room temperature

2 Shallots, minced

2 Garlic cloves, minced

Directions

Once Turkey has come to room temperature pat dry with paper towels.

Remove Neck and Giblets and put aside for the Turkey Gravy.

Preheat oven to 425 degrees. Make sure oven shelf is positioned in the lower third of the oven.

Make the compound Butter:
In a large bowl, combine Butter, minced Thyme and Rosemary, Shallots, Garlic, Lemon Zest, Lemon Juice, Kosher Salt and Black Pepper with a spatula. Combine well.

Place Turkey in a roasting pan with a rack and season inside with Kosher Salt and Black Pepper.

Take two lemons and stab them all over with a fork and stuff inside the cavity of the Turkey. Also, stuff the bunches of Thyme and Rosemary inside the cavity.

With a small spatula take compound Butter and carefully put under the skin of the Turkey. Thinly slice remaining 1/2 lemon and slide into the skin.

Take Olive Oil and rub all over the Turkey.

Season with a good amount of Kosher Salt and Black Pepper.

Place in oven. Roast for 20 minutes at 425 degrees. After the first 20 minutes, lower temperature to 325 degrees. For cooking time look at Turkey package instructions for guidelines according to how many pounds your Turkey is. The Turkey will be cooked when an instant read thermometer inserted into the thick part of the leg joint is at 165 degrees.

Take cooked Turkey out of oven and cover it with foil and let it rest for 30-45 minutes before serving.

Turkey Gravy

Turkey Gravy
This year I added the Neck and Giblets to make the Turkey Gravy and it added more flavor.

Ingredients

4 cups Low Sodium Chicken Stock

Turkey Neck and Giblets

4 tablespoons, Flour

1 Bay Leaf

1/2 stick, unsalted Butter

4 tablespoons, Carrots, chopped

4 tablespoons, Celery, chopped

4 tablespoons, Shallots, chopped

3 cloves Garlic, minced

Kosher Salt

Directions

In a large pot, add Neck, Giblets, pan drippings from Turkey (remove excess fat), Chicken Stock and Bay Leaf. Heat on low-medium heat for about 15-20 minutes.

In another large pot, on medium heat, melt Butter and add Carrots, Celery, Shallots and Garlic. Cook in Butter until slightly browned.

Stir Flour into Butter and Veggies to make a roux.

Cook for a few minutes until the roux turns golden brown in color.

Drain stock to remove Neck and Giblets and return stock to pot. Slowly pour the stock in the pan with the roux, whisking as you add it. Do not stop whisking. Once incorporated stop whisking, return to a boil, then lower heat to a simmer and reduce by a third. Takes about 15 minutes.

Strain the gravy through a mesh strainer. Season to taste with kosher salt.

Jalapeño-Sour Cream-Chives Mashed Potatoes

Jalapeño Sour Cream Chives Mashed Potatoes
To give this dish a kick,  I added 2 roasted Jalapeños to my mashed potato favorite. These mashed potatoes are rich, creamy and a little spicy.

Ingredients

2-3 Jalapeños

3 pounds Potatoes

3-4 tablespoons, Chives

1/2 cup Sour Cream

1 1/2 cups Milk

6 tablespoons, Unsalted Butter

Kosher Salt

Olive Oil

Jalapeños ready to go in oven
Directions

Preheat oven to 350 degrees.

Wash Jalapeños in cold water and dry with paper towel.

Cut top off and slice jalapeños in half, remove seeds and membrane.

Coat with Olive Oil and Kosher Salt on both sides. Place on cookie sheet.

Roast in oven for about 20 minutes and turn over half way through.

Let cool and chop, set aside for now.

Chop Chives, set aside for now.

Main ingredients to add to Potatoes
Peel and cut Potatoes in half. Place Potatoes in a large pot with cold water and add Kosher Salt.

Bring Potatoes to a boil on medium-high heat, then lower heat and simmer uncovered for 12-15 minutes. Make sure Potatoes are fork tender.

In a small saucepan, heat Milk and Butter until Butter melts and is hot. Do not let it boil. Remove from heat until Potatoes are cooked.

Jalapeños roasted, yum!
When Potatoes are cooked, drain in colander and return to pot or a large bowl and mash the Potatoes with a masher or use a food mill if you have one. I used my good ol' masher.

Slowly add Butter/Milk mixture and stir with a spatula. Keep adding enough until it has a creamy texture.

Add 2 teaspoons of Kosher Salt, Sour Cream, Jalapeños and Chives and blend together well. Taste and add more Kosher Salt if you wish.

Green Bean Casserole

Green Bean Casserole
Allen made his yummy Green Bean Casserole and no Thanksgiving for us would be complete without it. No Salt was added to the recipe since the canned Green Beans and Mushroom Soup have enough salt.

Ingredients

4 cans French Cut Greens Beans, drained

2 cans Mushroom Soup

1 1/2 cups, Milk

1 large container French Fried Onions

2 tablespoons Worcestershire Sauce

2 teaspoons Black Pepper

Directions

Preheat oven to 350 degrees.

Take a large glass or ceramic dish and combine Mushroom Soup, Milk, and Worcestershire Sauce. Using a whisk blend well.

Add Green Beans and Black Pepper and stir well.

Sprinkle 2/3 of French Fried Onions over the top.

Bake for 30-35 minutes. Remove and sprinkle more French Fried Onions and put back in oven for an additional 10 minutes.

Oven times vary so keep an eye on it.

Mushroom Cornbread Stuffing

Mushroom Cornbread Stuffing
Allen used Stove Top Cornbread Stuffing and followed directions. Allen added 2 cups of  sliced Mushrooms, 1 thinly sliced Celery stalk and 1 Shallot to boost the flavor. It was so good with our Turkey Gravy.

Bourbon Brown Sugar Chicken Thighs With Chick Peas Over Rice

Bourbon Brown Sugar Chicken Thighs With Chick Peas Over Rice

Bourbon Brown Sugar Chicken Thighs With Chick Peas Over Rice
Last week, Allen bought a bottle of Guy Fieri Bourbon Brown Sugar Sweet & Sticky Barbeque Sauce for some chicken wings he brought to grill for a family BBQ. We had enough left in the bottle so I used them with chicken thighs for dinner last night. This meal was full of flavor and not much work so give it a try. The pic of Guy's BBQ sauce is from an older post when we first purchased his sauce line. We have gone through about 5 bottles of this sauce and our local Stop & Shop now carries it so we do not have to order it online anymore. I used curled parsley from Allen's indoor herb garden, but you can use cilantro instead.  If you use cilantro in the chick peas and use my spice mix, omit the cilantro powder.

Chicken Thighs
Ingredients
4 Chicken Thighs (skin on, bone in)
1 cup Guy Fieri Bourbon Brown Sugar Sweet & Sticky Barbeque Sauce
1 Onion
Kosher Salt
Black Pepper
Vegetable Oil
2 tablespoons Curled Parsley

Directions
Chop onion in 4 quarters.

Wash chicken and pat dry with paper towels. Season chicken thighs on both sides with kosher salt and black pepper.

Place thighs in ziplock bag, add onion quarters and BBQ sauce, zip and shake until well blended. Place ziplock bag on plate or dish in fridge.

Marinate for 3-4 hours.

Take out chicken for about 20 minutes before placing in oven to allow it to come to room temperature before cooking.

Preheat oven to 375 degrees.

Coat thin layer of vegetable oil in glass dish.

Place chicken and contents of ziplock bag (onion quarters and BBQ sauce) in a baking dish.

Cook for about 50-55 minutes turning thighs half way.

Chop some curled parsley and sprinkle over thighs before you serve.

Guy Fieri Bourbon Brown Sugar Sweet & Sticky Barbeque Sauce
Chick Peas
Ingredients
1 15.5 oz. can Goya Low Sodium Chick Peas
1 tablespoon Tomato Paste
1 tablespoon Curled Parsley
Kosher Salt
Whatever spice mix you like (see my spice mix below)

Directions
When the chicken has about 15 minutes left, place chick peas and liquid in pot on medium-low heat.

Add tomato paste and stir well.

1/2 teaspoon kosher salt (optional) and stir.

Add your own spice mix or you can try mine:
Take a small glass bowl and add the following spices:
1/2 teaspoon Hungarian Paprika
1/2 teaspoon Cilantro Powder
1/4 teaspoon Mexican Oregano
1/4 teaspoon Cumin
1/4 teaspoon Ground Chipotle Pepper
1/4 teaspoon Onion Powder
1/4 teaspoon Garlic Powder
1/4 teaspoon Black Pepper

Combine spices and add to pot, stir well.

After 8 minutes, turn heat to low and simmer for 7 more minutes.

Chop some curled parsley, add and stir well right before you serve.

Serve chick peas over a bed of rice with chicken thighs.

Rice
We use a rice cooker and use White Rice Extra Long Grain.

Season rice with Coarse Himalayan Pink Salt or Kosher Salt if you don't have this on hand.

Enjoy!

Steak with Peppers and Onions and Basil Rice

Steak with Peppers and Onions and Basil Rice

Steak with Peppers and Onions and Basil Rice
When Allen picked up some groceries the other day he bought a bag of sweet mini Peppers in different sizes (yellow, orange and red). I planned a Steak dinner last night and thought the Peppers with Onions would be a perfect combo. I served this with Basil Rice using fresh Greek Basil from Allen's indoor urban garden and Salad. The Basil adds a nice aromatic touch and great taste to the Rice. The Hot Sauce compliments the Worcestershire Sauce and Seasonings to the Steak, Peppers and Onions and gives it a robust flavor. Allen received Island Fever Crucian Hot Sauce from the Virgin Islands to cover on the blog and we love it (forthcoming post on Chicken Wings later this week). The slow-smoked Chipotle Peppers and secret blend of ingredients in Island Fever Crucian Hot Sauce round out this meal perfectly. You can order Island Fever Crucian Hot Sauce here: http://www.islandfeverflavors.com/.

When grocery shopping, we bought Kraft Oven Fry Extra Crispy Chicken and loved it. This is a very simple Chicken dish to make and is juicy and crispy. You will not miss that the Chicken is not fried. Spicy Chorizo Pasta

Spicy Chorizo Pasta

Spicy Chorizo Pasta
Here is another 20 minute meal that is huge on taste and a little on the spicy side. My hubster has been growing an indoor urban garden and the cilantro was ready so I used some for this meal. The freshness of the cilantro goes great with this recipe since it is also one of the ingredients in the sauce. I had a can of Rotel and Chorizo sausage and thought making it with Elbow Pasta would work, so I came up with this recipe. I think it may be one of Allen's new favorite pasta dishes.

Ingredients

1 package (1 pound) Elbows (I use Barilla).

1 10 oz ROTEL Mexican Lime & Cilantro Diced Tomatoes With Lime Juice & Cilantro.

1 tablespoon Tomato Paste.

1 package (5 links) Chorizo Sausage.

1 yellow Onion, chopped.

1/2 cup Monterey Jack Cheese, freshly grated.

1 cup + more to top pasta Grated Parmesan Cheese.

2 teaspoons Vegetable Oil.

1 teaspoon Olive Oil.

2 tablespoons Butter.

2 tablespoons + more for sprinkling on top Cilantro, roughly chopped.

1 teaspoon Mexican Oregano.

1 teaspoon for Chorizo + 2 teaspoons for Pasta Kosher Salt.

Directions

Chorizo

Take Chorizo sausages and remove them from casings.

Chop Onion.

In a skillet on medium heat, add Vegetable Oil and when hot add Onions and Chorizo.

Add Kosher Salt, Mexican Oregano and Tomato Paste and stir until combined.

Use potato masher to crumble meat up however large or small you want it. I like it in big chunks.

Cover and cook until brown, about 12-15 minutes.

When Chorizo is cooked, add Sauce and stir. Add to Pasta (see below).

Cilantro grown by Allen indoors - yay!
Sauce

Place ROTEL Tomatoes in medium size pot and use immersion blender until smooth. (You can use a food processor or standard blender as well).

Cover and simmer on low while Chorizo and Pasta cook.

Pasta

In a large pot, boil Water.

Season with Kosher Salt.

When boiling, add Olive Oil.

Cook Elbows one minute shy of Al Dente.

Before you drain, reserve 1/2 cup Starchy Cooking Liquid.

Drain. Return Elbows to pot.

Add Butter and stir until melted.

Add Monterey Jack Cheese and combine.

Add Chorizo and Sauce and combine.

Add Cooking Liquid and combine.

Add Grated Parmesan Cheese and combine.

Add Cilantro and fold in gently.

Serve.

Top with more Grated Parmesan Cheese and Cilantro.

If you wish, serve with side salad.

Enjoy!
