Ribeye Steak, Spanish Rice And Chipotle Beans

Pin It Ribeye Steak, Vigo Spanish Rice And Chipotle Beans

Ribeye With Onions, Vigo Rice, Chipotle Beans
On Sunday, Allen and me bought a ribeye steak from Dines Farms at the Riverdale Y Market and cooked it earlier this week.

I seasoned the ribeye on both sides with kosher salt and mixed the following spices and rubbed it on:

1 teaspoon Hungarian Paprika

1/2 teaspoon Mexican Oregano

1 teaspoon Cumin

1 tablespoon Ground Chipotle Powder

1 tablespoon Black Pepper

Ribeye Cooking On Foreman Grill
We cooked the ribeye on our Foreman Grill to medium-well and added chopped onions. The ribeye was placed on a cutting board to rest for about 5 minutes.

Ribeye Resting
For the spanish rice, we always use Vigo Spanish Rice and cooked it with stuffed manzanilla olives. Our side dish was chipotle beans that we just heated and served. This was a quick and super yummy dinner.

To contact Dines Farms, please email: DinesFarms@aol.com.

El Yucateco Green Habanero Hot Sauce

Pin It El Yucateco Green Habanero Hot Sauce

El Yucateco Green Habanero Hot Sauce
9000 on the Scoville scale, El Yucateco Green Habanero Hot Sauce (4 oz.) has a great kick. Not for the heat whimps (like my wife, hee hee) as this sauce is really hot. I first saw El Yucateco on Facebook doing some blog research. I was unable to find it locally yet as I searched and one day I saw it for sale at the Bronx Milk Plant grocery. I picked it up immediately and have used it on a lot of Mexican foods and some Dominican food also.

Wings with El Yucateco Green Habanero Hot Sauce
High in heat this is recommended but too hot for most if you do not like spicy green heat. The first thing I noticed before the heat kicked in was the green freshness of the Green Habanero they use. This fresh taste was the first time I had a green hot sauce or even salsa for that matter that tasted so fresh. It was like they had just made it today when I opened the sealed bottle. I made some awesome Green Habanero Wings (see photo) with this and they were good.

I am looking forward to cooking with more El Yucateco Products as well. They have many sauces and some other condiments also. Splash it on (in moderation) chicken, burritos and egg dishes also. I had some on my poached eggs one morning. I really am into the heat from this sauce. El Yucateco Green Habanero is very good and will heat up your kitchen.

Bourbon Brown Sugar Chicken Thighs With Chick Peas Over Rice

Pin It Bourbon Brown Sugar Chicken Thighs With Chick Peas Over Rice

Bourbon Brown Sugar Chicken Thighs With Chick Peas Over Rice
Last week, Allen bought a bottle of Guy Fieri Bourbon Brown Sugar Sweet & Sticky Barbeque Sauce for some chicken wings he brought to grill for a family BBQ. We had enough left in the bottle so I used them with chicken thighs for dinner last night. This meal was full of flavor and not much work so give it a try. The pic of Guy's BBQ sauce is from an older post when we first purchased his sauce line. We have gone through about 5 bottles of this sauce and our local Stop & Shop now carries it so we do not have to order it online anymore. I used curled parsley from Allen's indoor herb garden, but you can use cilantro instead.  If you use cilantro in the chick peas and use my spice mix, omit the cilantro powder.

Chicken Thighs
Ingredients
4 Chicken Thighs (skin on, bone in)
1 cup Guy Fieri Bourbon Brown Sugar Sweet & Sticky Barbeque Sauce
1 Onion
Kosher Salt
Black Pepper
Vegetable Oil
2 tablespoons Curled Parsley

Directions
Chop onion in 4 quarters.

Wash chicken and pat dry with paper towels. Season chicken thighs on both sides with kosher salt and black pepper.

Place thighs in ziplock bag, add onion quarters and BBQ sauce, zip and shake until well blended. Place ziplock bag on plate or dish in fridge.

Marinate for 3-4 hours.

Take out chicken for about 20 minutes before placing in oven to allow it to come to room temperature before cooking.

Preheat oven to 375 degrees.

Coat thin layer of vegetable oil in glass dish.

Place chicken and contents of ziplock bag (onion quarters and BBQ sauce) in a baking dish.

Cook for about 50-55 minutes turning thighs half way.

Chop some curled parsley and sprinkle over thighs before you serve.

Guy Fieri Bourbon Brown Sugar Sweet & Sticky Barbeque Sauce
Chick Peas
Ingredients
1 15.5 oz. can Goya Low Sodium Chick Peas
1 tablespoon Tomato Paste
1 tablespoon Curled Parsley
Kosher Salt
Whatever spice mix you like (see my spice mix below)

Directions
When the chicken has about 15 minutes left, place chick peas and liquid in pot on medium-low heat.

Add tomato paste and stir well.

1/2 teaspoon kosher salt (optional) and stir.

Add your own spice mix or you can try mine:
Take a small glass bowl and add the following spices:
1/2 teaspoon Hungarian Paprika
1/2 teaspoon Cilantro Powder
1/4 teaspoon Mexican Oregano
1/4 teaspoon Cumin
1/4 teaspoon Ground Chipotle Pepper
1/4 teaspoon Onion Powder
1/4 teaspoon Garlic Powder
1/4 teaspoon Black Pepper

Combine spices and add to pot, stir well.

After 8 minutes, turn heat to low and simmer for 7 more minutes.

Chop some curled parsley, add and stir well right before you serve.

Serve chick peas over a bed of rice with chicken thighs.

Rice
We use a rice cooker and use White Rice Extra Long Grain.

Season rice with Coarse Himalayan Pink Salt or Kosher Salt if you don't have this on hand.

Enjoy!

Heartbreaking Dawns Classic Gold Hot Sauce

Pin It Heartbreaking Dawns Classic Gold Hot Sauce

Chicken Wings made with Heartbreaking Dawns Classic Gold Hot Sauce
As with most of the sauces from Heartbreaking Dawns, this one will go fast in a heat lovers pantry. Heartbreaking Dawns Classic Gold Hot Sauce (5-oz.) was named 1st Place Red Sauce at the New Orleans Hot Sauce Show. I had Classic Gold Hot Sauce on my homemade spaghetti and was impressed with the amount of the nice Habanero kick it gave to my wife's homemade pasta sauce. With ingredients like golden habanero peppers, onion, tomato, green bell pepper, carrots and more this sauce is a real winner. The golden habanero peppers are what gives this hot sauce the great kick it delivers.

The expert cooking and combination of ingredients by Chef Johnny and Nicole McLaughlin give it a wonderfully crafted hot and spicy flavor. I also had this on wings, rice and beans, eggs, and a lot more. This sauce compliments many foods and is highly recommended by myself and Two Frys. The Heartbreaking Dawns company originally caught my eye as I was looking for local hot sauce companies in the NY area, and I found in them a real winning sauce company with top shelf sauces.

The above picture features chicken wings we made in a January post with this hot sauce. It was a hit with my wife and I and we loved this hot sauce! As a matter of fact, I used up the entire bottle already so it is time to get some more.

Paula Deen Hot Sauce

Paula Deen Hot Sauce

Paula Deen Hot Sauce
After hearing Paula Deen on an episode of Next Food Network Star say when she eats spicy food she does not like food to hurt her, I was surprised she had a Hot Sauce line. As Paula Deen claims on her website, the sauce has a good amount of flavor but not much heat. The sauce can be used straight and is still not hot, just flavorful.

Being a fan of hotter sauces I thought, what could I do with this condiment great in flavor yet low in heat? I figured it out by making pulled pork using a generous amount of Paula Deen Hot Sauce as a flavor enhancer with my spices. The pulled pork turned out really good with a little kick but even that was tolerable for the more mild fans of pepper sauces. Also, this hot sauce complimented homemade beans and rice my mother in law made me as she uses no picante in her beans, just bell peppers.

Paula Deen Hot Sauce has good taste and flavor and is for the low mild scale sauce fans, not true heat seekers. The bottle sized at 8.5-oz. I recommend using this hot sauce to flavor up food without "heating" them up. I also used this hot sauce on Paula Deen Cheese Biscuits Mix my wife made earlier this year. I also recently made some nice wings with this sauce.

Atlantic City Food And Wine Festival The Grand Market - Bally's

The Grand Market, lobby area
Allen attended The Grand Market at Bally's on Friday for a bit before he headed over to the Define "Cheese-Steak" event. We attended the Saturday session from 12:00 - 4:00PM with my brother and sister in law and had a great time. Allen and me also went on Sunday from 12:00 - 4:00PM and I took most of my pictures this day and did our shopping.

Chef Diane Henderiks
The Grand Market features food oriented companies selling everything from hot sauces, chocolate, brownies, peanuts, pecans, peanut butter and much more. Some restaurants from the Atlantic City casinos offered samples, and many wine and spirits companies had samples available for consumption. There were companies selling cookwares, knives, kitchen cabinet companies, etc. This year The Grand Market took place in three rooms back to back in the 6th floor of the Bally's Ballrooms. The Grand Market is one of the festival highlights and there were four sessions so people could squeeze a session or more in with other scheduled events.
